Singapore interlude: the best tofu pudding ever
This is the saddest picture I have ever taken. It is an empty plastic bowl in Singapore’s Chinatown. The bowl used to contain the best tofu pudding that I have ever tasted. (That’s tau huey to you if you’re Singaporean, or taho if you’re Filipino, and probably ta-what? if you’re gaijin, banyaga, or gweilo.) Purchased from a humble stall whose name I have stupidly forgotten. Soft, silky, delicately yet deliciously flavoured with some kind of colourless syrup. Enough for two to share, all for the princely sum of $1.20 (Singapore currency).
